Fragrant and flavorful spiced apple cider is one of my favoritefall drinks!

There’s so much that I love about autumn. All those colors, trees that look like they’ve been set on fire, piles of leaves on the ground that I can’t help but kick when I walk past ’em, the crisp air, and of course all the cozy Fall recipes!

True, I love food any time of year, but those apples, pears, pumpkins, figs and everything else that’s in season in the Fall remind me of all the warm, comforting, soul nourishing meals that are just around the corner. From apple pie to pumpkin pie, pumpkin cheesecake, red wine poached pears, and fig jam to apple curry, pumpkin curry etc. there is so much sweet and savory comfort that Fall produce promises you of.

And apple cider is big on that list too.

Today, I’ve got a simple yet beautiful Spiced Apple Cider recipe for you! Everyone has their favorite cider recipe, and this is mine. 🙂 This time of year, there’s nothing like a warm mug/glass of spiced cider to warm you from the inside out. amiright?

BUT hey, it wouldn’t be me, if I didn’t spike it with some bourbon too though right? Now that’s what I call soul-warming! 🙂 If you want to leave out the alcohol, however, that’s OK too. As long as you don’t make me. 🙂

The funny thing is, if I had to choose between apple juice and orange juice, I’d always choose OJ. However when it comes to cider, nothing beats crisp, refreshing apple cider.

BUT, it wouldn’t be me again, if I didn’t somehow kick it up with a couple of additions too right? And the addition here – Raspberries! – works beautifully.

This cider is just so flavorful, and so simple to make, I had to share it with you guys. Not only do the raspberries make the cider taste amazing, they also make it look pretty with a beautiful red hue. Plus I sweetened this with maple syrup, rather than use sugar. Maple syrup adds another warm flavor profile that obviously goes well with apple.

With something this delicious, and this easy to make, I know you guys are going to love making this spiced apple cider too! Plus, those spices are going to make your house smell UNBELIEVABLY good! 😀

Spiced Apple Cider Recipe

The simple addition of raspberries and warming spicesmakes this Spiced Apple Cider Recipe crisp, refreshing, delicious and the perfect soul-warming drink for Fall feather!

Ingredients:

  • 6 cups of apple cider
  • 4 – 5 sticks of cinnamon
  • 1 ½ tsp of whole cloves
  • 5 cardamom pods
  • 1-2 star anise
  • about ½ cup maple syrup
  • 2 green apples cut into slices or wedges
  • 7 oz / 1 punnet of raspberries

To Serve

  • 2-3 tbsp of bourbon per cup roughly measured
  • Apple slices and extra raspberries to serve

Instructions:

  • Place all the ingredients (except for the maple syrup) in a saucepan. Bring everything to a boil on medium-high heat. Lower the heat to medium to medium-low heat and simmer for 20-30 minutes.

  • Strain the cider, save the cinnamon sticks and discard the rest. Return the cinnamon sticks back to the cider (optional – alternatively, you could use them as a garnish when you serve)

  • Stir in the maple syrup (just enough for your taste).

  • Serve while warm in glasses/mugs with some bourbon (optional), extra raspberries, apple slices and cinnamon sticks.

What can I say? It’s CIDER baby! Spiced and spiked, just the way we like it around these parts. Those spices bring such incredible warmth and fragrance to this drink and completely elevate it to a whole new level. Not to mention that kick from the bourbon too. It’s perfect for this weather, and even better at night with a side of my popular instant pot short ribs with bourbon!

And for all you guys living in the southern hemisphere, not to worry, this is delicious even cold too! All the flavors and notes – from the spices to the maple syrup to the raspberry to the apple – come through beautifully.
